Plaited Raisin Rings

Ingredients:
½ portion of Basic Sweet Bun Dough
200g raisin
Glazing:
1 egg, lightly beaten with
⅛ tsp salt
50g melted butter
Method:
- After kneading the flour into a smooth and elastic dough, add raisins and knead the dough until well-mixed, about 2 – 3 minutes. Leave to rise until it doubles in bulk.
- Punch down and knead the dough for about 3 minutes until smooth again. Rest for 10 minutes and divide dough into two equal parts.
- Divide each part into 3 equal portions and roll into 35cm long strips.
- Plait 3 strips together neatly. Join up the two ends to form a ring. Place into a greased 250cm / 8” ring mould.
- Cover a piece of damp cloth and leave aside to rise until double in bulk.
- Glaze with beaten egg and bake in a pre-heated oven at 200ºC for 25 – 30 minutes, until cooked and golden brown.
- Remove from the oven and brush melted butter on top.
