Nice and Easy Banana Cake

Ingredients:
180g butter / margarine
180g castor sugar, 2 eggs
4 ripe bananas, coarsely mashed to get 1 cup
⅛ tsp banana essence, optional
3 tbsp milk, mixed with
1 tbsp lemon juice
A (sifted):
240g plain flour, 1tsp baking powder
1 tsp baking powder
Decoration:
2 ripe bananas, sliced, ½ lime
Method:
- Cream butter and castor sugar till light. Add eggs, one at a time, beating well after each addition.
- Mix in mashed bananas, banana essence, sour milk and A till well-combined.
- Pour into a greased and lined 25cm X 15cm / 10” X 6” loaf tin or paper cups.
- Squeeze lime juice over banana slices, arrange banana slices on top of the cake as decoration.
- Bake in a pre-heated oven at 180 ºC for about 20 – 25 minutes till cooked and golden brown.
- Remove cake from the oven and leave to cool before serving.
Note:
- This is an all time favorite cake that everyone must try!
- Use riped bananas to give it the rich banana flavour.
- During baking, if cake has turned golden brown but it is still uncooked in the center, cover the top with a piece of aluminium foil to prevent it from burning.
- Besides paper cups, you can also pour the mixture into a big 20cm / 8” cake, using 180 ºC for about 45 – 50 minutes till cooked and golden brown.
