Tropical Durian Cake

Ingredients A:
250g butter / margarine
200g castor sugar
4 eggs
Ingredients B:
180g durian flesh, added
4 tbsp milk, blended and strained
½ tsp durian essence, optional
Ingredients C:
240g self-raising flour, sifted
1 tbsp custard powder, sifted
¼ tsp salt
Method:
- Cream A till light. Add eggs, one at a time, beating well after each addition.
- Fold in half of B and half of C mixture well combined. Fold in the remaining B and C mixture till well mixed.
- Pour cake mixture into a greased and lined 20cm / 8” round baking tin. Bake in pre-heated oven at 180 ºC for about 45 – 50 minutes till cooked and golden brown and cooked.
- Remove cake, leave to cool, cut into pieces and serve as snack.
Note:
- For obtaining strong durian flavour in the cake, it is best to use fully riped and good quality durian flesh
- After blending, strain the durian flesh to get smooth and velvety flesh.
