Victoria Sandwich Cake

Ingredients A:

4 eggs
200g castor sugar
½ tsp vanilla essence
100g plain flour, sifted
4 tbsp strawberry jam, stirred until smooth

Method:

  1. Whisk eggs and castor sugar until light and fluffy. Add vanilla and mix well.
  2. Sift ⅓ portion of flour over the egg mixture and fold in lightly. Repeat until all the flour has been used.
  3. Pour cake mixture into greased and lined 20cm / 8” square baking tin.
  4. Bake in pre-heated oven at 180ºC until cooked and golden brown and cooked. Remove from the oven, leave to cool before slicing into two layers.
  5. Apply strawberry jam on one layer of cake and sandwich with the other layer. Cut into pieces and serve.

Note:

Victoria Sandwich can be made into many other flavours.

Variations:

  1. Pandan Kaya Sandwich: Substitute vanilla essence with 2 tbsp thick pandan juice and apply kaya instead of jam.
  2. Orange Sandwich Cake: Substitute vanilla essence with 1 tbsp of freshly grated orange rind and used marmalade jam instead of strawberry jam.
