Crispy Chinese Arrowhead (Ngaku/Chi Gu) Chips

Ingredients:
1Kg Chinese Arrowhead / Ngaku / Chi Gu
cooking oil (for deep frying)

Method:

  1. Peel and slice Chinese Arrowhead evenly with a slicer.
  2. Heat up oil in a frying pan with small heat.
  3. Put the Chinese Arrowhead chips piece by piece onto the frying pan (to make sure that the Arrowhead / Ngaku chips are not stuck together).
  4. Keep on stiring and flipping the Chinese Arrowhead chips to make sure that they are evenly fried.
  5. Fry until golden brown or until there is no bubble coming out from the Chinese Arrowhead chips.
  6. Drain the Chinese Arrowhead chips using strainer.
  7. Pour the Chinese Arrowhead chips on a kitchen towel to absorb the excessive oil.
  8. Repeat the above steps until you have finished frying all the arrowhead Chinese Arrowhead chips.
  9. When it is cool, store it in an air-tight container.
