Taiwan Pineapple Tarts

Ingredients for jam:
1kg grated pineapples
200g sugar
3 tbsp maltose
1 tbsp lemon juice

Ingredients for pastry:
210g butter/ margarine
100g castor sugar
15g milk powder
10g green tea powder (optional)
1 egg
¼ tsp green tea essence (optional)
300g plain flour (sifted)
½ tsp baking powder

Method :

  1. For jam, put grated pineapples and sugar into a pot and cook till dry.
  2. Add in maltose and stir and cook till golden brown.
  3. Put lemon juice and stir well.
  4. Remove and leave to cool continue to form into 20g balls.
  5. For pastry, Cream butter, castor sugar, milk powder, green tea powder till light.
  6. Add egg, green tea essence and beat till light.
  7. Add in flour mixture to form into soft dough and divide into 25g portions.
  8. Wrap up the filling with pastry and press into square moulds.
  9. Bake in pre-heated oven at 180°C till both sides turn into golden brown.
  10. Ready to be served.

Note:
You may change the shape to desired shape if triangle is not your favorite.
