BBQ Pork Dumpling With Sesame

Ingredients A:
220g glutinous rice flour
40g tapioca flour
250ml water

Ingredients B:
80g wheat flour
130ml hot water

Ingredients C:
100g sugar
70g shortening

Fillings:
400g BBQ pork /Char Siew/Char Siu (diced)
2 pcs onion (shredded)

Seasoning:
1½tbsp light soy sauce
1½tbsp sugar
1 tbsp oyster sauce
1tsp sesame oil
adequate dark soy sauce

Gravy:
2 tbsp corn flour
4 tbsp water

For coating:
200g white sesame
50g black sesame

Methods:

  1. Mix wheat flour with hot water. Add ingredients A and C to form a dough.
  2. Heat pot with oil, fry onion shreds. Add BBQ pork dices and seasoning, fry evenly. Add gravy and mix well. Set aside.
  3. Divide the dough to 30g each, wrap in filling, coat well with some water and sesame. Deep-fry dumplings in hot oil until golden brown. Serve.
