Ondeh-Ondeh

Ingredients :
100 g sweet potato
50 g glutinous rice flour
30 ml warm water (I use more to form into soft dough)
1 tbsp fresh pandan juice

Filling:
100g gula melaka (palm sugar) – chop finely

Coating (Mix them together):
1/2 cup grated white coconut
pinch of salt


Method:

  1. Clean & boil or steam sweet potatoes till cooked.
  2. Remove skin and mash the sweet potatoes.
  3. Add glutinous rice flour, pandan juice & water. Mix into a pliable dough. Knead until smooth.
  4. Divide the dough into small portion, roll them into balls.
  5. Make a hole, put in some gula melaka and seal the hole. Re-shape into balls.
  6. Boil some water in a pot.
  7. When water boils, add in a few balls at a time.
  8. When the ondeh-ondeh float to the top, that means they are cooked.
  9. Drain them well and roll on the coconut mixture.
