Banana Fritters

Ingredients:

6 large ripe bananas, mashed
1¼ cups all-purpose flour
1 teaspoon baking powder
3 tablespoons sugar
Pinch of salt

Method:

  1. Sieve together flour, baking powder and salt.
  2. In a separate bowl, combine mashed bananas and sugar.
  3. Gradually combine flour mixture into mashed bananas, stirring well to form a sloppy batter.
  4. Heat oil in pan or wok over medium flame.
  5. Using a tablespoon, drop spoonfuls of batter into hot oil.
  6. Fry till fritters are golden brown. Drain on paper towels.
