Banana Fritters
Ingredients:
6 large ripe bananas, mashed
1¼ cups all-purpose flour
1 teaspoon baking powder
3 tablespoons sugar
Pinch of salt
Method:
- Sieve together flour, baking powder and salt.
- In a separate bowl, combine mashed bananas and sugar.
- Gradually combine flour mixture into mashed bananas, stirring well to form a sloppy batter.
- Heat oil in pan or wok over medium flame.
- Using a tablespoon, drop spoonfuls of batter into hot oil.
- Fry till fritters are golden brown. Drain on paper towels.
